When talking about delicacies, how can we not mention desserts? Arsa, a traditional sweet dish of Uttarakhand is made up of rice, water, jaggery and oil. It is high on the taste meter which makes it so hugely popular. No festival in Uttarakhand is complete without the presence of Arsa.

Bal Mithai is a brown chocolate-like fudge, made with roasted khoya, coated with white sugar balls, and is a popular sweet from the Himalayan state of Uttarakhand in India, especially regions around Almora. Today, Baal Mithai, has become a delicacy in many neighboring hill stations.

In order to accelerate crystallization, confectioners later learnt to immerse small twigs in the solution for the crystals to grow on. The sugar solution was colored with cochineal and indigo and scented with ambergris or flower essence. In India, misri is often uncolored or tinged mildly with orange food color. Other food coloring may be added to the mixture to produce colored candy.

Singori (also spelled Singodi) or Singauri is an Indian sweet made with Khoya and wrapped in maalu leaf. It is similar to Kalakhand. It is an exquisite cuisine of Uttarakhand. The fresh smell of Molu leaf and the taste of condensed milk flavored with cardamom and coconut will leave you asking for more. Almora is the most famous place to try Singodi in Uttarakhand.
